DESCRIPTION:
The creation of this coffee is a collaborative effort, bringing together the harvests of three producers from the Afonso Claudio region in the central province of Espirito Santo. Altamiro Lüdke, Anilar Simer de Vargas, and Dalmo Ruchdeschel, who traditionally specialize in robusta (known as conilon in Brazil), ventured into cultivating arabica varieties to target higher-quality markets and attain better prices.
Espirito Santo coffee is meticulously handpicked at its peak maturity, growing at an altitude of 1000m between July and December. It undergoes stringent sorting to eliminate overripe or underripe cherries before being immersed in water basins for 24 to 72 hours to remove the pulp. Afterwards, it is carefully laid out on raised beds, regularly turned to ensure consistent and appropriate drying. This batch comprises various region-specific varieties such as Catuaì, Catucaì, Obata, and Mundo Novo. With its classic roast profile, Espirito Santo delights with its syrupy sweetness, making it an ideal choice for espresso. This remarkably sweet and syrupy coffee entices the palate with notes of cocoa and vanilla, offering a delightful texture reminiscent of molasses.
