DESCRIPTION

 

A superb and exotic coffee processed by an exceptional farmer, Luis, who grows this pink bourbon variety with care. He is checking on the sugar levels of the cherries to ensure an optimal ripeness at harvest. He then ferments the cherries for 12-15 hours before depulping and proceeds to a 48-hour anaerobic fermentation under temperature control. The beans are then sent to drying as is. This makes a honey process with a controlled fermentation. The result features powerful notes of strawberries and cream as well as a delicate and elegant acidity.
