DESCRIPTION

 

This coffee comes from the mountainous region of Sierra Mazateca, in the north of the province of Oaxaca. It is the result of the harvest of several producers from an indigenous community that has cultivated coffee for many years. The high altitude and the oceanic climate make Sierra Mazateca an ideal region for the production of high quality coffee. But the relative isolation of these non-Spanish speaking communities has slowed their access to the specialty coffee market. Thanks to our partner Osito Coffee, we are extremely proud to be among the first roasters to be able to offer it, and we hope this is the start of a long partnership with these communities. 

 

Grown at an altitude comprised between 1,600 and 1,800 meters, this coffee is made from the Bourbon and Typica varieties. It is picked at full maturity and sorted by floatation first, then by hand, to remove overripe or underripe cherries. It is then mechanically pulped, then dry fermented for 24 to 36 hours, before being laid out on palm leaves for 10 to 15 days, which ensures slow and even drying. Particularly complex, it offers great depth as filter as well as in espresso.
