DESCRIPTION

 

 

Antonio Ramirez started growing his coffee in 1985, on a tiny piece of land he bought for himself. At that time he was cultivating trees of the Typica variety exclusively. The market price at that time was so low that it was nearly impossible to support your family with the income the coffee farm provided. This situation would last for several years until he met a man named Rony Gamez, who gave him access to a specialty coffee market that gave him much more / lb for his crops. Antonio then changed his harvesting habits, picking only the most ripe cherries to ensure he could offer a quality product that meets specialty coffee standards.

 

His process then involves soaking the cherries in a basin of water so that the damaged cherries can be removed. Fermentation lasts 30 hours and drying 20 days. Antonio is constantly working to improve the quality of his coffee. It currently produces only 20 bags of 60kg.
